Jay,
Go to http://www.sea-dog.com/cgi-bin/webdata_pro.pl?_cgifunction=search&_layout=pdfs&pdfs.itemgroup=Cabinet%20Hardware and check out "Stainless Door Stop and Catch" (It downloads as a PDF).  We used to use it and it is an awesome piece or hardware.  That takes care of your companionway door.

Now, as far as the seat back on your aft facing fold down bench, hell, I remember fixing both a 23 and a 26 Express at '07 Dealer meeting!  They both use the same seat module.  I don't really have a better fastener suggestion right now, but what I would do is relocate the snap sud on the glass so that the backrest is not pulled so tight.  Give it a little bit of slack.  Snaps use friction as a means of securing, and it is an iffy method at best, especially when pulled tight.  Moving the stud will allow it to "flex", yet not build up enough momentum to come loose in rough seas.

cJAY,
Gotcha.  My suggestion?  Heavy duty 3M Velcro.  Yeah, I know all the jokes about velcro, but 3M makes some serious stuff.  A small square, one at the top and the bottom of the door will hold it.

Bob, I was searching for some help with how to secure my companionway hatch and it sounds like maybe you might know.  My 3250 has a big sliding hatch but only a dinky keyed lock that would pop open if someone waved a screwdriver at it.  Naturally, key is gone (just bought the boat), but even if I had the key, that is no lock.  I'm looking into something more secure like a hasp but I want it to be good looking.  My present thoughts run with putting the hasp near the bottom of the hatch door where it will be less noticeable.  I can't believe this hasn't come up before.  Ideas?
